uclibcgnueabi is your target architecture path, not your host architecture
path.

/stuff/tmp/staging/x86_64-linux/usr/bin/mkfs.jffs2

or 

/stuff/tmp/staging/i386-linux/usr/bin/mkfs.jffs

(not sure if i386 is correct, but should be some variant ...)
